Why goat meat ? How can you eat these sweet little kids? Isn’t the meat tough? Doesn’t it taste of old billy goat?...

These are the usual questions asked when we talk about our enterprise.

The goat is an animal producing milk, fiber and meat and fun too if you like these fascinating creatures.

Unfortunately, as goats get older and less productive they have to be replaced to produce the fiber or the milk. Not all kids are suitable as a replacement - maybe their fiber isn’t up to standard or the milk yield isn’t satisfactory for the feed the goat consumes. Usually there are a proportion of male kids which are not required simply because one adult buck can comfortably serve 40 does so you don’t need loads of males around the place. Only the best lines are used for the herd replacements so naturally there are often kids of either gender which are not required for this purpose. A lot of people still put down the male kids because of the costs involved feeding them.

We think this is a waste of life and a waste of a delicious product - the meat. Kid meat is anything up to 12 months old, and therefore comparable with lamb. The taste is very subtle, not as strong as lamb at all. And at that age it is tender meat; if prepared properly it melts in your mouth.

The meat is low in both fat and cholesterol and therefore ideal as a healthy alternative to the usual lamb and beef. It is also found , like goat milk, to be lower in allergenic properties than other meats for some people.

As explained on “The Goats” page our animals enjoy a proper goat-style browsing life and are outdoors finding their own food most of the time in a completely natural way. On our steep hills they don’t have the chance to become fat and therefore greasy as lambs often do - goat meat is inherently less fatty anyway. Equally importantly, they don’t compete with other livestock for food as they prefer to browse rather than graze, and make use of leaves and shrubs that otherwise would be wasted. Very environmentally friendly! Nor are they fed huge quantities of concentrates to increase weight gain - goat is one of the least artificially produced meats on the market.

To get the true taste, I roast the joint with a little pepper only and rather make a fancy gravy. The meat is so delicious that I find there is no need for overpowering spices. It is prepared as lamb. On the bone 25 minutes per 500g plus 25 minutes at 160 - 180 Celsius / Gas mark 3-4.

Without bone - rolled 30 minutes per 500g plus 30 minutes the same temperature.
